Some say the longer you leave it the better it tastes. Is that true?

Answer:
We brew our own and find that all beers can be opened and consumed at two weeks, however the longer you leave it the better it does taste.. Generally we open ours after a month.

If you ever make a batch that to you tastes bad dont get rid of it just set it aside for three or six months and try it again... it will improve and sometimes far more than you would have expected.
Well you can't really answer this question. All types of beer depending on the ingredients and what type you want to brew take different amounts of time. Are you trying to make a pale ale or a dark lager?
If you're making a 'pedestrian-style' of beer, like a pale ale or a porter, it should be ready in two weeks. Stronger beers, like barleywines, should be left alone for several weeks before you touch them. Belgian beers are a couple of weeks, too.
Until it clears....then pour slowly to not bring up the sediment.
