I can%26#039;t get over the perfect flavor, juiciness, and tenderness of prime ribeye. Filet is pretty good, but waaaay too expensive, waaaaay too small, and doesn%26#039;t have near the beefiness of ribeye.
As for seasoning, I like it old-fashioned with just some salt and pepper. Other stuff just makes it taste like...well other stuff. If I%26#039;m gonna be paying top dollar for a piece of meat, I wanna taste the meat, not some cheap spice rub.
Doneness, I like to hear the moo when I cut into it. Anything past medium rare is just plain burnt in my book.

But these are just my preferences. Everyone has the right to their own choices (no matter how wrong they might be. haha).


Oh, and just another thought really quick:
For all of the vegetarians, its fine and good that you don%26#039;t wanna eat meat. But for those of us who do like to enjoy the wonderful blessing of meat, please leave us be.
Why would you even comment on a question about how you like to eat your steak?

One that requires a fork to cut. Knives are for the butter dish. A bit of salt and a bit of pepper should be all that is required. It should be slightly seared on the outside, but pink and juicy in the middle. Never chewy.

This is pricey. Especially since you can generally only get this quality in an expensive restaurant.

Any cut that meets this criteria is fine with me. New York, Ribeye, Fillet, or just a thick slice of roast beef is fine with me.

And don%26#039;t forget to serve it with good friends, good home-made bread, gravy, potatoes, and red wine. (That%26#039;s all the seasonings a good cut of beef really needs.)

Grass-fed Ribeye, New York strip, or Sirloin, with Maldon Sea Salt and coarse ground pepper, and thrown on the grill till rare to medium rare.

I%26#039;m sorry but tenderloin is WAY overrated and not a very good cut of meat. Sure it%26#039;s tender, but you%26#039;ve got to drown it in sauce to get any flavor. Just my opinion, I know some people love it.

I like mine seasoned with Alamo seasoning by McCormick and a little butter and minced garlic. I do not care what kind of steak it is, as long as it is a high quality meat. I like mine medium rare.

I like ribeye if it is tender. Over all I prefer the New york strip. Filet is a little expense for what you get. I get mine cooked med-well. If you over cook your steak, it will be shoe leather.

I like Filet, well done!!! It%26#039;s delicous! I really don%26#039;t like seasoning, I like peppers blended in with my steak!!

So it like Filet Mignon, well done, and peppers mixed in!
