hey there ! well i am colombian and i know a truly delicious recipe to making what we call %26quot;Arepas%26quot; its like a small flat round cake and well you should try it , here goes the recipe!

Masarepa [ its like the flour for it and stuff you can find it at a market in the spanish food isle ]

colombian cheese [ or any other cheese but i recomend colombian lol ]

butter [ i use %26quot;i cant believe its not butter!%26quot; ]

saltt [ any kind ]

Recipe instructions;
take a cup and fill it up with the Masarepa . then pour it into a bowl. using the same cup, or a diff. one if you would like, fill it up with waterr, and then pour it into the bowl and mix it together well with a spoon or something . take a pinch of salt and put it in the mixture you have so far. now for the cheese...take it and mash it in to the smallest pieces . then take that cheese you just mashes and put it into your mixture and mix it again until the cheese is everywhere. take about 3 big spoonfuls of butter and also mash it in well. well mix it all very well, and to see what its gonna taste like so far, you can eat a small piece and taste. lol. now set up a pan with the fire not so high, and leave it to heat up. back to our mixture. take a small amount in your palm and roll it up into a ball. then kinda squeeze it in your palms and fix it up until it kinda looks like a pancake and put it on the pan. flip it on both sides until golden brown or a nice golden color, and there you have it, AREPAS!!! good luck hope you enjoy it..!

I love chocolate and I love this cake:

500g dark chocolate
150g butter
95g almond powder
5 egg
2 2/3 tablespoons sugar
2 2/3 tablespoons all purpose flour
250g sour cream
150g milk chocolate melted

1. Brush a thin layer of melted butter on the inside of a 9 inches cake tin. Cover the bottom and the inside of the side with baking paper.
2. Melt dark chocolate with butter over a double boiler, mix until smooth. Add in almond powder, mix well and remove from heat.
3. Beat egg with sugar with a electrical mixer until thickened in another bowl. Sift in flour, mix well. Pour the mixture into the melted dark chocolate, mix well. Then pour the mixture into the cake tin.
4. Preheat oven at 180oC. Bake the cake at 180oC for 25 minutes. Remove from oven and leave cool. Cover with cling warp and refrigerate for over night.
5. Mix sour cream with melted milk chocolate until smooth, pour on top of the cake, level the top and refrigerate until firm. Decorate with thick chocolate roll. Server with whipped double cream or ice cream.

by far one of the best desserts i have made so far has been peach cobbler......
4-5 peaches (pitted and cut in .5-1 inch slices)
1 cup sugar plus 1 oz sugar (measure these separately)
1 tbsp of FRESH lime zest
1 tbsp of FRESH liem juice
1.5 oz lard (chilled and cut into pieces)
4.5 oz. UNSALTED butter (chilled and cut into pieces)
3 tbsp ice water
2 tbsp cornstarch
9.5 oz. AP flour (not bread or cake just all-purpose)
1 tsp of kosher salt plus another .25 tsp

Preheat your oven to 375.
In a food processor, process the flour, salt (1 tsp), sugar (1 oz.) , and zest first. Then add the fats. Process until the mixture is crumbly. Add the water via spritzer bottle for even distribution and process. Keep adding water until the dough sticks together (just grab some and squeeze). remove the dough from the processor and shape into a disk. Place the disk into a zip-top bag and store in your chill chest for at least 30 min so that the fats may firm up a little.

for the filling, combine the sugar (1 cup), salt (1/4 tsp), and cornstarch. Add the peaches and lime juice and stir with your hands. Within minutes a sort of syrup will form.

After 30 mins. rmove the dough from the fridge.
Grease a 9*9 baking dish with unsalted butter.
Take a 1/3 of the dough, pinching it into pieces and placing it at the bottom of the dish. Add the filling.

For the covering, use a rolling pin to roll the remaining dough just large enough to fit over the top of the dish. Make sure you roll the dough while it is still in the bag. Cut the bag on its sides and invert (flip it) onto the top of the filling.
Place in the oven for about 60 mins.
You an just stop here for a soft moist crust or you can turn your broiler on low for 3 mins. to brown the crust. I prefer a soft crust though.
