Sounds like you need lots of crock-pot recipes. That way everyone can come home to a hot meal. Casseroles are usually good leftovers as well.

Shepards Pie is really good for leftovers.
A pound of cooked ground meat in a cassorale dish topped with corn(or peas or carrots or all of them) then topped with mashed potatoes to cover Top with your favorite shredded cheese and bake until cheese is melted.
Tuna noodle casserole is good too.
Cooked noodles
cans of tuna
Mushroom soup
peas( peas and carrots)
compine all with a little milk until smooth but not runny
put in casserole dish and top with lots of shredded cheese(you don't have to use cheese if you don't like it)
Bake until heated through
top with crushed potato chips
Baked Mac N Cheese with hotdogs
Cooked elbow noodles
processed cheese(Velvetta)
I like to use cottage cheese to to make it creamy
milk and butter to taste
cut up dogs into pan (I've used sausage links and cooked brauts)
spread into greased casserole dish and bake until crisp on top or just warmed through if you don't like it crunchy

You can buy a whole chicken and cut it up or buy chicken already cut up and bake it and eat that for the night. I would prefer that you get 2 extra pieces of chicken breats and wrap them in foil or a storage container and put in the refridgerator. Eat the rest of the chicken thats cooked for the night and eat it with side dishes. The next day you can take the chicken breasts you put up the other day and cut it up as small as you can get it or blend it and add ingredients to make a chicken salad. That what we usually do for the next they if we have enough chicken.
Simple Answer is: Make LARGE main dish cassaroles. There are a lot of cookbooks out there and online. Porkchop casserole is my favorite. Casseroles definitely solved the leftover dilema for us. Most can be refrigerated for about 3 days, so scoop a portion out, "nuke it", and you're done!
