I'm baking a medium piece of salmon fillet in my oven, 400 degrees F, for 17 minutes.
salmon gets done within 10-12 minutes. when you taste it its soft and moist. over cooking causes it to become dry. it doesnt change colour much but becomes a bit lighter.
That is much to long... color, texture are both good rules. Usually the skin will easily pull away and also you will see small white balls on the top of the fish. This si nothing more that protein. when you see this you will know it is done.
You could pull back a piece with a fork. That way you can see inside and see how done it is. The old "flakes easily when forked" is proven wrong. Salmon can be rare and is quite good. I cook single portions 6 minutes each side. You could try the same under your broiler.
I use the fork method of lightly running the fork over the fish. If it flakes easily it is done. Fish if over baked gets really really dry. If you fry fish the fish will curl and that means over cooked.
WHEN DONE,Salmon is truely none when it flakes with a fork...the color should be a nice lite pink...The taste should have a kiss of sweet and alittle firm and flakey in your mouth...techniques would be the fork to see if the salmon is flakey and nice lite pink color...Then sat down and enjoy...

Salmon should be cooked until it is just done. It should be pink, and when you press on it with your finger it should spring back and not be soft. 17 minutes is way too long. Try searing it in a pan with a little oil to give it some color and a little crust, it will be cooked halfway, then finish it in the oven for 5 minutes. This will also give it more flavor. Be careful not to over cook it because it will get dry and chewy.
