Chocolate and Prune Brownies

Makes 15
Ingredients
2 oz (50 g) dark chocolate (75 per cent cocoa solids), broken into pieces
2 oz (50 g) pitted pruneaux d'Agen, chopped and soaked overnight in 2 fl oz (55 ml) Armagnac
2 oz (50 g) skin-on almonds
4 oz (110 g) butter
2 large eggs, beaten
8 oz (225 g) demerara sugar (brown sugar)
2 oz (50 g) plain flour
1 level teaspoon baking powder

You will also need a non-stick baking tin measuring 10 x 6 inches (25.5 x 15 cm) and 1 inch (2.5 cm) deep, lightly greased and lined with silicone paper (baking parchment).

Begin this the night before you are going to make the brownies by soaking the chopped prunes in the Armagnac. The next day, begin by pre-heating the oven to gas mark 4, 350°F (180°C), then chop the almonds roughly, place them on a baking sheet and toast them in the oven for 8 minutes. Please use a timer here, or you'll be throwing burnt nuts away all day.
While the almonds are toasting, put the chocolate and butter together in a heatproof bowl fitted over a saucepan of barely simmering water, making sure the bowl doesn't touch the water. Allow the chocolate to melt – 4-5 minutes – remove it from the heat, then beat till smooth. Next, stir in the other ingredients, including the prunes and Armagnac, until well blended. Now spread the mixture into the prepared tin and bake on the centre shelf for 30 minutes, or until slightly springy in the centre, then leave it to cool for 10 minutes before cutting into squares and transferring to a wire rack.

Banana, Rum and Prune Ice Cream

INGREDIENTS
SERVES 8
6 ripe bananas
1 ? cup condensed milk
2 cups heavy (double) cream
Juice of 1 lemon
1/4 cup caster sugar
5oz ready to eat prunes (stones removed)
3 tbsp dark rum

METHOD
Chop the prunes into small pieces. Place in a bowl and mix with rum. Cover and leave to soak for several hours.
Put the peeled bananas, lemon juice and sugar into a food processor and blend till just smooth.
In a large mixing bowl, beat together the condensed milk and the cream. Then stir in the banana mixture.
Finally, add the rum soaked prunes (and any liquid) and mix well.
Pour the mix into a suitable freezer-proof container, cover and place in the freezer overnight.
During the first couple of hours of freezing, occasionally remove the ice cream from the freezer and stir well scraping the frozen ice cream away from the sides and mixing the prunes through evenly. Repeat this process until the mix starts to firm.
TIP
Remove the ice cream from the freezer 10 minutes before you plan to serve as this will allow it to soften a little and make it easier to scoop.

Prune Cake

Ingredients:
12 ounces dried prunes
1 1/2 cups water
18 1/2 ounces duncan hines spice cake mix
3 large eggs
1/3 cup vegetable oil

Steps:
1. Combine prunes and water in a microwave safe bowl.

2. Microwave on high for 2 minutes.

3. Drain reserving liquid.

4. Puree prunes in a food processor or blender.

5. Preheat oven to 350 degrees.

6. Grease and flour a large bundt pan.

7. In a large bowl blend cake mix, eggs and prune liquid and oil.

8. Beat on medium speed for 3 minutes.

9. Stir in prune puree and beat for 1 more minute.

10. Bake at 350 degrees for 40-45 minutes.

11. Cake is done when toothpick inserted in center of cake comes out clean.


ORANGE PRUNE NUT LOAF

Serves 10 to 12
1 medium orange, unpeeled
1/2 cup orange juice
2 cups all-purpose flour
2/3 cup sugar
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup prunes, chopped
1 cup walnuts, chopped
1 egg
2 teaspoons butter, melted
1/2 teaspoon vanilla

Preheat oven to 350 degrees.
Wash orange, and coarsely chop in a meat grinder or blender. Add to orange juice.
Combine flour, sugar, baking powder, baking soda, and salt. Stir in the chopped cooked prunes and the chopped walnuts.
Beat together orange mixture, egg, butter, and vanilla. Add to dry ingredients and beat for about half a minute.
Turn into greased 9-inch by 5-inch by 3-inch loaf pan, or 3 mini loaves.
Bake at 350 degrees for 60 to 65 minutes for loaf pan or about 40 minutes for mini loaf pans.

Prune Muffins:

12 muffins

1/2 cup pitted prunes, chopped (press down in measuring cup to make a full 1/2 cup)
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup white sugar
1 large egg, beaten
1/2 cup sour cream
1/3 cup butter, melted
Topping
1/4 cup butter, melted
1/2 cup white sugar
1 teaspoon cinnamon

1. In a large bowl, combine prunes, flour, baking powder, salt, cinnamon and sugar.
2. In a bowl blend together beaten egg, sour cream and melted butter.
3. Add to dry ingredients and stir just until well blended, but do not overmix.
4. Batter will be firm and look lumpy, like a stiff drop cookie dough.
5. Fill 12 greased medium-size muffin tins about 3/4 full; you will need to use a spoon and knife to do this as the dough is very thick.
6. Bake 15 - 20 minutes in 375 degree oven, or until golden brown.
7. Let sit in pans for a couple of minutes before turning out, they will be easier to handle when dipping in the topping.
8. While hot, dip muffin tops into the 1/4 cup melted butter, then sugar and cinnamon mixture.
9. Note: I use about 1/3 cup of sugar and find that is sufficient, or you can double dip and have a nice crunchy topping.

Apricot Prune bread

I'd change this recipe to maybe 1/2 cup dried prunes and 1/2 cup apricots.

Apricot Bread Recipe

Makes 1 loaf
Ingredients:

2 cup All-purpose flour
1 cup sugar
1 cup chopped dried apricots
1/2 cup chopped walnuts
1 tbsp baking powder
1 tsp salt
2 eggs (beaten)
1 cup milk
1/4 cup vegetable oil

Using a bowl combine flour, sugar, apricots, nuts, baking powder and salt. Set aside. In another bowl combine eggs, milk and oil. Add liquid to the dry ingredients. Just till blended. Pour mixture into a greased baking pan. Place in a 350 F oven for 50-60 minute. Remove let cool for 10 min. Remove from pan. Continue to cool on wire rack.


Plum Pie

Ingredients:

2 cups Flour
1 pinch Salt
1 tsp. baking powder
2 TBSP sugar
? cup unsalted butter
1 egg, beaten
1 to 2 Tbsp. Milk

-----Filling-----
2 pounds Italian Plums, quartered and pitted
1/2 cup sugar
1 tsp. cinnamon
2 TBSP flour

Directions:
Combine the flour, salt, baking powder and sugar. Cut in the butter until it is very fine. Add the beaten egg and the milk. Work the mixture with fingers until it is smooth. Press it evenly over the bottom and sides of a 9-inch round tart pan with removable bottom. Place the pitted plums over the crust. Sprinkle 1/4 cup of the sugar over the plums. Combine the remaining sugar with the cinnamon and flour; sprinkle it over the top. Bake at 400 for 40 minutes, or until the plums are bubbling with syrup.

Steamed Prune (and Apricot) Pudding.

3 TBSP plus 1 ? tsp. butter
1/4 cup sugar
1 egg
2 tablespoons apricot Jam
1 cup Plain Flour
1 teaspoon baking powder
pinch of salt
1/2 teaspoon baking soda
1/2 cup milk
1/2 cup chopped prunes.

Cream butter and sugar. Add egg, beat well. Stir in Jam. Sift Flour, baking powder and salt into the creamed mixture and fold. Dissolve soda in milk then add to mixture with chopped prunes. Spoon into a puding basin, cover with foil and secure with a string. Steam in a pot of simmering water for 40mins or until pudding is firm to touch.
Shrimp-in-Love Pasta

4 oz. linguine, uncooked
1 cup cleaned medium fresh shrimp
2 medium tomatoes, chopped (about 1 cup)
1/2 cup PHILADELPHIA Cream Cheese Spread
1-1/2 cups torn cleaned spinach

COOK linguine as directed on package.
MEANWHILE, heat large skillet on medium-high heat. Add shrimp, tomatoes and cream cheese spread; cook and stir 3 to 4 minutes or until shrimp are cooked through and mixture is well blended.
DRAIN pasta; place in large bowl. Add spinach; toss lightly. Stir in shrimp mixture.

yes, one of my favorite ways is called sweet and sour sausage and sauerkraut.
I lay my brauts on the bottom of the pot,pour on 1 can of beer.
take 1 jar of bavarian sauerkraut put it in a bowl with 2 peeled and sliced apples and 1/2 small onion chopped,1/2 cup brown sugar and mix well.lay on top of sausage ,cover and cook 4-5 hours on high .
I dont reccomend cooking raw sausage on low as this could be dangerous.
this can also be done in the oven in about 1 hour.
