lunches are a pain without sandwiches

There are some great suggestions here, and this is a great question...

Personally, I can't accept a "no" when I need something, so I just find a way around it. I don't mind the occasional sitdown meal or snack, but I LOVE sandwiches. I had to become primarily vegetarian for my hyperuricemia (no wheat allowed), but I go to Jimmy Johns every day for their veggie club... french bread rolls w/cheese, veggies, avocado spread and no problems; they even deliver for those days I'm not feeling well... If you don't have a franchise near you, technically you could make it yourself w/stuff from your grocery store, even make your own bread. There are several chains (including JJ's) that sell lettuce wraps sandwiches now or you can make those on your own too. Also, you can make veggie breads w/o wheat... pumpkin, banana, zucchini, carrot...

All the best...
These are my favorite :)

Wheat-free Chocolate Decadence Cake
This may be the best chocolate cake in the world. And it has no flour. Refer to the attached web site.
I feel your pain. Lunches without sandwiches can be a challenge, but you can buy bread made of rice or oat flour instead of wheat flour. Super thin corn tortillas can be filled and rolled for rollups.
If you're ambitious, you can make your own bread from rice, oat, or any other flour. Be sure that you don't expect the same texture as wheat flour bread, but rice flour produces a really nice light bread.
A nice lunch does not have to include a sandwich, though. During hot months, a cold soup is delicious with crunchy veggies. OR you can take your favorite cabbage rolls, filled with your favorite things, a stuffed tomato, roll some favorite spread on large loose lettuce leaves, add your favorite things..grated carrot, cheese (if you eat it). sprouts, roasted veggies...whatever your heart desires....and roll it up.
You can also make "mini" sandwiches from rice crackers (not rice cakes).
Room temp salads, chock full of fresh veggies, beans, couscous, rice or rice noodles are a lovely lunch...just be sure to add great seasonings...mint, basil, peanut sauce...whatever that does not need refrigeration.

Happy Lunches to you.
